Tasty Topic Tuesday’s Mug Recipes

Have you been following Next Step on Instagram? If so, you know that on Tuesdays we’ve been making some yummy recipes that are simple single servings, but oh so tasty. Here are our favorite so far.

Mug Brownie:

3 Tablespoons Flour

3 1/2 Tablespoons of sugar

2 Tablespoons cocoa powder

1/4 Cup of water

2 Tablespoons of vegetable oil

Splash of vanilla extract

Pinch of salt

*Spoonful of chocolate chips if desired*

Put water and oil in a microwave-safe mug and mix. Then mix in all the dry ingredients. Microwave 1 min 30 seconds. Let cool 2 minutes.

Microwave times may vary. 1 min 30 seconds is based on a 1000 watt microwave.

Mug Chilaquiles:

1 Egg

1-2 Tablespoons of salsa

5-6 tortilla chips slightly broken

Pinch of salt and pepper

Cheese (optional)

Sour cream (optional)

Green onion (optional)

Whisk an egg in a microwave-safe mug. Add salsa and stir. Add broken tortilla chips and stir. Microwave for 1 min 30 seconds. Add optional toppings if desired. (I really like this with salsa Verde!)

Mug Omelet:

1 Egg

2 Tablespoons chopped veggies (bell peppers, onions, mushrooms, literally any veggie you like. I like to use leftover roasted veggies)

Pinch of salt and pepper

1 Tablespoons chopped breakfast meat (optional: bacon, ham, sausage)

1 Tablespoon shredded cheese (optional)

Whisk an egg in a microwave-safe mug. Add ingredients and stir. Microwave for 1 min 30 seconds.

Mug Pizza:

4 Tablespoons flour

1/8 Teaspoon baking powder

1/16 Teaspoon of baking soda [just do about half of the 1/8 spoon]

1/8 Teaspoon of salt

3 Tablespoons Milk

1 Tablespoon olive oil

1 Tablespoon tomato pasta sauce

1 Tablespoon shredded cheese (mozzarella is great, but whatever cheese you like)

Additional toppings optional (I love cooked peas on my pizza, or other leftover veggies, or pepperoni)

In a microwave-safe mug mix the flour, baking powder, baking soda, and salt. Then stir in the milk and olive oil. There will be lumps and that’s ok, but make sure there’s no dry spots. Add the tomato sauce to the top of the “dough mixture”. Add cheese and additional toppings on top of the sauce. Microwave for 1 min 45 seconds.
